Cinnamon and Honey Fritters

Not for the faint hearted, you'll find most North Cyprus Dessets are high in sugar and incredibly sweet.
To carry on the tradition here is a recipe for Cinnamon and Honey Fritters. They are delicious, just don't have them everyday!


Ingredients:

14 grams fresh yeast
or 6 grams dried yeast
300 ml. Warm water
½ teaspoon sugar
230 grams plain all purpose flour
¼ teaspoon salt
300 ml corn oil ( to fry fritters in)
1 ½ teaspoons cinnamon

For the syrup
8 tablespoons of honey

Method:
First you will have to prepare the fresh yeast. In half a cup of the warm water, add sugar and yeast. It must fully dissolve. Then let it stand in a warm place for 15 minutes. This will activate it and it should begin to froth. Be absolutely sure that the water is only warm and not hot.

In a medium size bowl, sift the flour and salt into it. Add the yeast mixture. Mix constantly and if you want you can use a electric mixer to do this.

Then start adding the warm water being sure to keep beating . You want the mixture to be thick, but not like elastic.

 When all the water has been added continue to beat it until it starts to bubble.

Cover the bowl with a thick cloth and set it in a warm place for 2 hours. You are allowing it to rise and it should double in size.

Now keep a cup of cold water and a teaspoon beside you. Heat the oil in a fry pan until it gets hot but not to the smoking point.

Wet the teaspoon with the cold water and your fingers as well. This will prevent the dough from sticking to the spoon or your fingers.

Take a teaspoon of the dough and place it into the oil . Gently press it down with your fingers, don’t get burned though.

Within in a few seconds you will see it puff up and rise to the surface.

Do about 6-7 at a time. Turn them over so they become a golden shape which takes about a minute.

Remove them with a slotted spoon and place them on a paper towel which will absorb the oil.

Then place them on a plate, sprinkle some cinnamon on them and drizzle a tablespoon of honey over them.

You will have to serve these immediately otherwise they will become soggy.
